It's Spring again! The days are warmer and longer. New life abounds, birds are singing and flowers are blooming. Reminiscent of this rebirth is our BLOOM, blueberry lemon cheesecake. It is bright with tart blueberry meringue layers complimented by citrus tang of lemon vegan cream cheese frosting.

Thawing suggestions for large cakes: From frozen 1.5-2hrs at countertop or refrigerate overnight from frozen then 30min at countertop. The cake layers should be soft and light.
